The Chouara tanneries, still active, are one of Fez's most powerful images. They're viewed from the terraces of the leather shops that surround them — access is free, but each shop expects you to browse at the end. There's no obligation to buy, and it's a rare chance to see a medieval craft still in production. You'll be handed a sprig of mint at the entrance to soften the smell.
